GRAND SELECTION - SHEEP - Sheep burger with goat cheese and carrot cream

INGREDIENTS:
2 Sheep burgers
1 seed burger bun
250g carrots
1 clove garlic
4ml white vinegar
2g cumin
2g paprika
2g brown sugar
10g parsley
125g goat cheese
Salt and pepper to taste


METHOD:
To make the Moroccan carrot cream, start by peeling and cutting the carrots into chunks and brown them in a saucepan with
olive oil and a clove of garlic. Also add paprika, cumin, brown sugar, a sprig of rosemary and sage. Add balsamic vinegar, parsley and
continue cooking. Using a blender, blend until you get a purée-like consistency.

Place the sheep burgers in a very hot pan, cook them for 3 minutes for side, seasoning them with oil and salt to taste.
Cut the goat cheese into thick slices and place them on the burgers and let the cheese melt into the meat.
In another very hot pan, toast the hamburger bun.

Start composing the sandwich by spreading the carrot cream on the base, place the first burger and a second layer of carrot cream,
add the second burger and close the sandwich.
